Gluten Free, Grain Free, Guilt Free Cookies.
Happy Sunday (and if celebrating- Happy Easter/Passover!) and April fool's day? Appropriately, today I'm sharing with you three "cookies" that are so delicious, it'll fool you into thinking it's the real thing... ha. ha.
ANYWAYS- below are three grain free cookies, made with whole foods and ingredients that we can pronounce. All of these contain fats and fiber and are relatively low in sugar - no blood sugar sabotage happening here y'all. These cookies are free of gums, emulsifiers, and preservatives. They taste so good you’ll hardly (key word) miss the traditional alternative.
Sakara Chocolate Cardamom Cookie

These cookies are my favorite. Okay I know, the price is steep- but with 8g of fat, 3g of protein per cookie (not to mention only 7g of carbs) you only need one of these cookies to feel satiated. With the depth of the flavor that this cookie has to offer, you’d swear that you would find butter and brown sugar on the ingredients list. I was a little skeptical about the cardamom powder. But after finishing an order of these, I think the warming spice is my favorite part!

Emmy's Organic Coconut cookies

Calling all coconut fans. Shredded coconut and coconut oil really shine in this macaroon. The size of the cookie itself is small but thick, and with the high fat content, 1-2 of these gets the job done. Emmy’s cookies come in many flavors from vanilla bean (my favorite) to dark cacao and raspberry. I know that the saturated fat in coconut oil gets a lot of bad press. BUT if you have good cholesterol and aren’t binging on the stuff, coconut oil can bring a wealth of benefits: from it’s anti-fungal and antibacterial properties to hormone balance, weight loss, and anti-aging support. Okay before you freak out about how many calories are in one cookie- you need to know that these cookies are HUGE. I’m talking like as big as your hand, AND about half an inch thick. I generally end up dividing each cookie into 4 pieces. The cookie is a little hard with a cakey texture, so I like to throw it in the microwave for a couple of seconds to soften. With a little warmth, you’ll forget that these cookies aren’t the real thing. With 8g of fat, 4.5g of protein, 3g of fiber per section (if you break into 4 pieces), and essentially 0g net carbs- we don’t have to call these cookies a “treat”.
A note on the 0g net carbs:
*net carbs 42g carbs-26g allulose-12g fiber= 4g net carbs
Per the KNOW food's website- “allulose is a great tasting, natural, non-GMMO certified sugar found in common foods like maple syrup, figs and raisins. Allulose has only 10% of the calories of table sugar and is not recognized by the body as a carbohydrate."
